Rinsing in cold water is most often used to decaffeinate coffee or tea, followed by treatment with pressurized carbon monoxide, which has the advantage of removing the caffeine whilst conserving the taste and appearance.
However, as we know that most of the caffeine is released in the first minute of infusion, you can also decaffeinate your favourite tea yourself, by discarding the water after 50 to 60 seconds, the right moment of balance between loss of caffeine and preservation of taste.
